1 decent sized bird: thawed, rinsed, and tied
1/2 bulb of garlic
A few sprig of thyme
Your favourite poultry seasoning or BBQ spice (I love Old Bay)
Preheat oven to 425F
Start by chopping the lemon into wedges, give the garlic a light smash with the flat side of your knife, to open it up a bit and remove the outer skin. Cut your thyme sprigs into smaller pieces. Couldn't be easier!
Next, stuff the chicken's cavity with the lemon, garlic, and thyme. Dust your bird with your preferred spice, and place in a pan.
Place in the oven for 1h20m or longer if you have a large bird. Check temp with a meat thermometer when it comes out to ensure it's fully cooked, then tent with tin foil and rest for 10 minutes.
Serve with potatoes or rice, fresh bread, garden salad, etc.
