The skin is needed to make the fond which gives the dish most of it's flavour. I like using red wine, it gives the chicken a nice purple colour but do as you like! As far as adding vegetables... I know it doesn't seem like much but if you go too far from the recipe the flavour isn't the same.

Why not serve it alongside a nice fresh garden salad with balsamic vinaigrette?

Is there a lot more sauce in the pot, seems like you might want more to sop up with your bread :) If you're happy with the results, fantastic, but if you want some advice I'd recommend chopping your veg finer and softening them for longer next time. My onion/celery/carrot is nearly unrecognizable by the time the dish is done.

Still, your presentation has my mouth watering!
