I cook the sausage and then add the flour directly using all that grease for the roux. Worcestershire sounds interesting, I'll have to try that. Has to be whole milk too.

Whole milk is better tasting, you are right.

I have however used Almond milk before to replace whole milk and replaced butter with coconut oil to jam the calories down...

Eh, my replacement options may not be everyone’s cup of tea, but it works for me... :)

I feel like this recipe is doing it wrong but it also sounds good so I dunno. Here is my way...

You take your sausages and put them in a frying pan, and then cover them with beer and cook them on low untill mostly cooked through. In another pan melt some butter and throw some flour in and create a roux. Add the sausage beer to your roux, and from here you have 2 choices, do you wanna make sausages and potatoes with sausage gravy, or do you wanna make mac and cheese? If you wanna make mac and cheese then crumble up the sausages and throw them in, then throw milk in, then throw cheese in, then you have the best cheese sauce ever. If you want sausage gravy and you are gonna have something like sausage and mashed potatoes for dinner, then you throw the sausages in the oven on broil to brown them and you add the milk to the sausage beer roux and you got yourself a creamy sausage gravy to put over your meal.

Hmmm, this sounds really doable, yummy and very versatile. You will have to go with what you think best.

Clearly you like bold flavors, this gravy is just a simple basic gravy, you add as much flair as you need.

I am going to try out your suggestions though, the chili I make with beer is awesome, so I can only imagine what those sausages must taste like...

Every time I try to make gravy it comes out tasting like flour, But biscuits and gravy is so good.

Trick wih a roux is adding flour slowly and cooking long and slow, stirring constantly, til it browns. Gotta cook the flour!
