Some coconut oil (1 tbsp or slightly more)
1c almonds or cashews
1/2c palm sugar
2c cream of wheat
4c low fat almond milk
Roast cream of wheat in little oil for 3 to 4 minutes in one pot. In next pot heat nuts/raisins in rest of oil on medium heat. Stir both pots constantly. Once raisins expand and nuts become roasted about 4 minutes, add heated dry cream of wheat to nut/raisin mixture. Add milk/sugar and cinammon and cardamom and keep heating on med low to medium. Stir constantly until kesari thickens nicely and remove from heat.
Add any fruit as topper if desired.
