It is ridiculously simple, and turning it half way through (45 mins breast down, turn, 45 mins breast up) makes for the juiciest bird with a lovely crisp skin.

Although I will say, if you really like the crisp skin with a roast chicken, don't squeeze too much lemon over the breast side skin or it can taste a little bitter.

It's literally the only way I cook roast chicken now, and when I tried different seasoning/herbs etc, I still cooked it with the same method.
