Orange Loaf Cake.
Preparation Time ~ 20 minutes
Cooking time ~ 1 hour
120g (1/2 cup) butter, softened
250g (1 cup) caster (superfine) sugar
3 eggs, beaten
Zest and juice of one orange
250g (1 cup) plain flour
1 table spoon baking powder
Juice of 1 orange (yes, we need one more)
3-4 tablespoons of honey
1 orange sliced into rounds and baked on a rack at 250F for 2 hours (could drop it to 1 hour)
-Preheat the oven to 350F. Grease and line a 1 liter loaf tin.
-Cream the butter and sugar together until pale and creamy, add beaten eggs a bit at a time, beating thoroughly each time.
-Put in zest, juice of one orange, and baking powder. Beat together. Pour into the loaf tin.
-Bake for 50-60 minutes.
-Turn out of the tin (could put it on a wire rack or something at this point).
-Mix the juice of one orange and honey. Pierce the cake with a skewer a couple of times and drizzle with syrup over. Leave to soak for a little bit.
-Decorate with dried orange slices.
