A good dehumidifier can easily pull a gallon of water out of the air a day in many climates. I was shocked when I first moved to an area that we needed to use one in the warm months.

Yes but dehumidifiers are:
A) One of the least energy efficient ways of generating potable water
2) Only as effective as the amount of water in the air at the time
So they would work really well in already wet or humid climates, but at that point it's probably raining, so you can just put a barrel under your downspout and collect rain water for free + the cost of filter material (Cheap)
