Not just distilling. Any concentration of ethonal. If you put wine in the freezer and scrape off the ice, you have commited the same crime as running a still

Funny you mention that. Way back when "ice" beers were popular I made one for my friends. The process involves freezing the beer before bottling to remove the ice chunks. Totally different flavor than the mass-brewed stuff at the time.

Just remember, you are also concentrating methenol, isopropyl, acetone, and other nasty stuff. Proper distillation removes these

it is so rewarding, i am doing both. last year i had 130l of apple cider, this year i will have 90l. i saved a ton of money by not buying any kind of booze for many months. last year i made about 6l of apricot palinka, this year about ready to do it again. i made rum out of molasses, whisky from my own unhopped beers and other fruit spirits. even a kombucha schnapps once made with jasmine tea. i have two liters of vanilla extract, hazelnut extract, diy amaretto and so on..

the key is not to use store bought sugar, just use the naturally present sugars or the taste will suffer.

all this is very tasty and fragrant fare, but the best part comes when the spirits are made medicinal, by steeping herbs, roots, fruits and fungi to create proper targeted medicine with active ingredients that can be used without the interference from any 'authority'. things like ginseng, reishi, adaptogens and micronutrient sources (such as green walnut for iodine) are my faves.

i lived in different jurisdictions in my life, sometimes it was illegal to distill and sometimes it was ok, but i never bothered with any of that, i just kept the fundamental rule of opsec - no tell, no smell, no sell.

Very interesting. I would love to try some of those recipes you are hinting at.

I know this breaks a little of your rules, but this is something I have a strong desire to try. If I wanted to make a low volume still that I could run out of my basement or shed, is there a good resource for a build? I had a brother in law that was doing some distilling, but my sister ditched him before I could get him to help me with a build. She got a little pissed when I asked her if I could keep him in the divorce instead.

instead i started small with an air-still and then just bought this head: https://milehidistilling.com/product/3-inch-diameter-traditional-pot-still-tower/ to go with this kettle: https://brewhaus.com/8-gallon-stainless-steel-moonshine-still-kettle/ i run the rig on my kitchen stovetop. very easy. hillbillystills.com is also popular.

there are lots of good forums with instruction for home build designs that are peer reviewed and therefore safe. the toxicity of the materials is often the issue. the design depends on what you like to drink most. i am a potstiller for maximum taste. some forums: homedistiller.org artisan-distiller.net aussiedistiller.com.au homedistilling.com stilldragon.org

as for the recipes, i am doing all-grain, 'biab' for beer. depending on the kind of malt the temperature rests will be different. im using unsulphured molasses in 5gal pails from the feed store for rum. my palinkas are pure fruit, no sugar, just sometimes add a bit of water and pektinase. i sometimes make technical ethanol using the death wish wheat germ (dwwg) recipe, the only time i use refined white sugar. once i bought about 60l of wine and made 'cognac', rested on french oak. i still have some and its better than any fancy brand from the store.

I haven't brewed beer in a while but I just started distilling small batches. So far, so good. Nothing spectacular yet but it will take time.

remember that Distilling water without remineralise it is a bad idea.

just buy a 12stage filter it should have UV lights, reverse osmosis filter, carbon filters and remineralizer
