I first saw these and then ended up looking more into strawbale homes and cob houses.

The benefits of an earthship I'd say are good if you're in an environment where water is precious. If you're anywhere else I'd look at straw bale, or cob. Earthships I'd say are probably the most labour intensive you can get. You have to be able to pack a tire with dirt and generally not something that older adults or young kids can do. However, with cob or strawbale anyone can do it basically since it's just piling on stacks of mud. Straw Bale gives you amazing insulation with some thermal mass, and cob is kind of the opposite great thermal mass but not as much insulation.

Hm.. Is there anything preventing one from building down with cob? Because that would basically eliminate the need for insulation.

Well typically the same or similar dirt/sand mix (called slip) is used on the outside of the straw bales so it provides both the insulative properties of the straw, and some thermal mass as cob.

I live in an area with lots of trees so I have always wanted to do some cordwood building.
