Some of Simo Hayha's figures are from a Finnish Army document (counted from beginning of the war, 30/11/1939):

22 December 1939: 138 sniper kills[17]
26 January 1940: 199 sniper kills[18]
17 February 1940: 219 sniper kills[16]
7 March 1940 (when Simo Hayha were seriously wounded): total of 259 sniper kills[16]

And then also:

According to Western sources, Simo Häyhä has been credited with 505 confirmed sniper kills.[2] A daily account of the kills at Kollaa was made for the Finnish snipers. However, he was also known to carry and use a submachine gun, and though very few of his kills using this weapon were confirmed, as such, the true count is thought to be much higher, more than likely around 800 kills.[2][8]

So, it's not as clear cut as you imply, but it's well into the hundreds, and he was killing multiple people on average every day for the entire time he was on the front. Very impressive.
