The picture at the top paints an unappetizing picture, but there's nothing wrong with roadkill of a large animal like a deer. You will generally want to discard the area where the animal was struck, at most about a quarter.

In states where this is an established practice the local sheriff or animal control will have a list of people to call when the driver that struck the animal doesn't want to claim it. So you don't have troll the neighborhood and assess the freshness of animals on the side of the road.

You'll need a dedicated freezer of course same as for hunting.
