I think they started off in Central Asia before spreading elsewhere(anthropology experts feel free to correct me).

East China is definitely prime Asian real estate, as you've said. They've had to deal with a great many incursions from Xiongnu/Mongols, Jurchens/Manchus, and other invaders from harsher parts of Asia.

Winter in most of China is pretty harsh. It's a continental climate.
