It would be just like in the video. Air isn't as thick as water, so it would let hair pass through more easily.

What? Explain using physics why it points straight up.
And are you really going to try to argue that having that Bride of Frankenstein hair is appropriate on the ISS? Get out of here. It's all just a big show to make it look like they're in space there's no reason that the women would have their hair out like that. It makes no sense.

It points "straight up" because there is no reason for it not to be. In zero-G, the hair isn't being pulled down by gravity any faster than anything else, so everything floats.
If you put food coloring into a filled water bottle, then drop the bottle, the food coloring stays floating around - the water and coloring fall at the same speed. The water is like the air in the station and the coloring floats just like her hair. Easy!
