you are stretching the material to that whatever you are bolting to. that is why there is torque specs on some assembly. also, there is some situations they call on you to replace the bolt if removed because it has stretched to much. This is very small amounts though.
that is why you sometimes hear that creaking sound you are releasing that tension on the threads.

i made a couple edits to clarify...
