Almost all distros allow you to customize before installation. Most people just click yes to default because they don't want to deal with all the set up. Debian has an advanced graphical set up that lets you customized everything before installation including the desktop environment.
Want even more customization, install arch.

Yep, point and click everything. The old version is still there if you prefer it.
