You know, documentation is something I'd be happy to help with. I'm a mediocre programmer, and I've done a lot of tech support, so writing up support documents means i get less stupid questions.

When people want to get started with programming I always say to pick a program you already use. That will give you an idea what features are missing that you might attempt to add. I think the same would apply to documentation. If you already use it then you might know where the docs are poor, outdated, or just plain missing.
