Right so my first step would be to have a session on youtube where you check out A few desktop environments. Ubuntu Mate, MInt Xfce 18, LXLE will show what I call the basic desktop environments. You could also search Enlightenment, Kde plasma and Ubuntu 16.04 to see some more complex DE's.
Then once you see one you like you can decide what sort of Distro you want running behind it. In my experience they are all Linux with varying degrees of user friendliness so it depends if you want to put time into learning your OS or if you just want to use it and not worry about the nuts and bolts behind it.
