TOMATOES. THE FUCKIN ANSWER TO EVERYTHING IS TOMATOES.
For real though, they're easier than everything I've seen recommended so far. If you grow one plant, just fertilize it with some fertilizer once in a while, water it (but make sure you don't get the leaves wet), put it in a cage and you'll have some good ass tomatoes guaranteed.

Gotta agree with the tomato freak on this one, especially when starting from plants tomatoes are extremely easy and satisfying to grow for beginners. You can get a decent crop from one or two plants with very little effort, or a massive crop if you put in a little more effort. And showing off home grown tomatoes is easy because people will know how to eat them, show the same people an eggplant or squash and they ask if it's even food.

They're really not good for you, and good luck finding a true heirloom (with no contamination) that will grow well outdoors.

Onions, green beans and radishes are easy. I grew those as a kid.
I forgot the radishes one time and they became as big as an apple, but didn't taste great anymore...

tomatoes and peppers are the easiest... if it's hotter and drier, peppers are easier than tomatoes... if you get good stead rain tomatoes may be easier than peppers. Zucchini and yellow squash are super-easy too. cucumbers are also really easy but you need something for them to climb.
I had success with those things when I knew absolutely nothing about gardening

Herbs. Easy to grow, many are perennial, can harvest stuff year round with right mix, grow in pots, planters, beds, or ground, can use them in practically every meal.

Radishes are top. 3 weeks to maturity, crazy easy.
Next, as others have said, is definitely tomatoes and squash.
Also, potatoes! Even if you put them in the ground and don't do any of the crazier techniques like mounding - you'll still get a yield.
