Update: oven ones were shit so I switched to frying. Definitely better fried. Unfortunately these just aren't as capable of being crispy as real fries, but I still like them as a slightly floppy kinda fry. If you overdo it you end up with burnt breading, they'll be crispy, but they'll just taste like burnt shit.

You can make them with yellow crookneck squash too. I oven fry them on a cookie sheet on oiled parchment paper after dipping them in an egg wash and then rolling them in a parmesan cheese/garlicpowder coating. 425 degrees for 10 min and then turn and bake another 10 min. Yummy! Also Keto-friendly!

How long did it take to bread these?

Probably an hour total, that's AFTER I prepared all the ingredients and had them set out ready to go, and not including cooking either. It was fucking annoying. But they were really good so idk man, probably worth it on a boring day

Yeah, I worked in a restaurant that made crispy sweet potato fries. Breading was a bitch.

Greek salad with zucchini added is the right thing to do with your zucchini.

Possibly could have been deep fried but I think better is a light spray of canola or olive oil, wire rack, and high temperature oven... Waiting for the first round to bake right now. I'll post a picture if it looks good enough to make it worth doing so. I'll update on how they taste for sure
