The controller comes with a probe that is super easy to wire. At first I tried setting it inside the chamber but I realized that it was reading the temperature of the chamber floor and not the beer so I did the most professional thing possible and taped it to the side of the fermenter. I was worried sticking it in the wort would be an easy invite for infection.
Yeah I thought the same, i was a little more worried about some freak electrical accident. I just decided to make a Dort and didnt wanna risk it with my first lagered beer. I plan on trying a Great Lakes Amber Lager clone (Elliot Ness)

You could try a stopper thermowell to insulate your probe from the wort. The usually run about $25 (US) online.
