I used a basic STC-1000 Temperature controller, learned to wire it using this instructional guide which was surprisingly easier than I expected. I took an old freezer that we weren't using anymore, painted it using chalkboard chalk. I am pleasantly surprised with the results. It wasn't nearly as difficult as I thought it'd be and it works great.
The controller comes with a probe that is super easy to wire. At first I tried setting it inside the chamber but I realized that it was reading the temperature of the chamber floor and not the beer so I did the most professional thing possible and taped it to the side of the fermenter. I was worried sticking it in the wort would be an easy invite for infection.
Nice! That looks like the same chest freezer I am using. I got mine for $35 on craigslist. I cut a rectangle out of the compressor area steel sheeting and hard wired the STC-1000 in place to interrupt the built in thermostat. I like your paint job!
excellent! ours look similar. I think mine was some Kenmore chest freezer but I don't recall the type, as it was pretty old. The paint job I used was some fairly cheap chalkboard paint from Home Depot or Lowes for like $5. Completely worth it!
One thing that I ran into with my ferm chamber is that you can get mold build up inside due to the humidity dependent on what temp you are fermenting at. I bought a bucket of dehumidifying stuff on amazon to keep the moisture in check. Granted mold shouldn't hurt your beer since you'll have an airlock on it but you always want to stay clean.

You could try a stopper thermowell to insulate your probe from the wort. The usually run about $25 (US) online.

How feasible would it be to turn it in to a keg cooler when you aren't fermenting?
