I really enjoyed this article but it leaves out a few things of great interest.
Calories are everything. I've read estimates that rural peasants needed as much as 6000-7000 calories a day to produce enough food to feed themselves. They were mostly dependent on bread for these calories and analysis of archaeological sites showed humans lived that way for thousands of years much to terrible affect on our health.
Our propensity to get fat very quickly from carb consumption is an adaption to deal with feast and famine nature of agriculture.
