1/2 cup red lentils(washed and sorted)
1/2 cup quinoa
1/3 cup hemp seed kernels
Total 112 grams of legumes grains and seeds
1 cup of chicken stock, or bone broth
small container of olive oil and butter
4 strips of bacon
seasoning to taste
Onion + mixed veggies
~$13 and plenty of food for 2 people. Granted it doesn't take into account your time to cook, clean up materials and electricity used.
Chop up onion, sautee in butter and olive oil, add seasoning, add garlic if desired, and spicy stuff or a pinch of cumin, some turmeric, go easy a little spice goes a long way. Once onions start turning clear, throw in your beans/legumes/seeds lower heat from medium to medium low and stir some more. Throw in your chicken stock/bone broth, and another cup of water along with some mixed veggies(fresh preferably avoid canned, go frozen if you must).
While that's simmering at a low boil, fry up some bacon at low temperature. If you have an air fryer do ~16 min at 300 degrees, it'll be crispy and perfect I promise. Take the bacon grease and throw it in the beans, then chop up the bacon and throw it in as well. Let it cook like rice, enjoy.
