When I used to hunt we would always cook the heart and liver on the spot as soon as we field dressed the deer. We used to carry a bit of fat, onion, and a thick piece of layered foil. Was a tradition for us back then.

I don't have time to go hunting and I no longer live near mountains where the hunting is more enjoyable. The deer down in the far south are not very big and if I want venison I can just shoot one from the front porch in the evening which isn't exactly hunting but more like harvesting.
