I agree science is run as a religion, a totally corrupt one at that. Our media confuses people conflating invention with discovery. Science is not a very creative activity, it is one of discovery and often trial and error and recording/analyzing of data after the fact. Consequently scientist have a horrible record when it comes to prediction of real world effect of anything. Engineers are the ones that apply science in creative way to invent, they are much better positioned to make future predictions based on data.

Empiricism of studies on human subjects is practically impossible. The contention that studies only provide a glimpse of a moment in time with human subjects is true. For example, diets change; environments change. From the start of a human study to peer review to final publishing usually takes about five years. People may have drastically changed in the mean time. Thus medical information is best gleaned from the clinicians.
