I've heard the "Jon Becomes a White Walker/Wight" theory before. Honestly, I don't buy it, and I don't believe Jon is actually dead. Critically wounded? Yeah, totally. Dead? That can be a particularly blurry line. We know Melisandre has been showing interest in Lord Snow (more subtle in the books than in the show), and I think she might be beginning to wonder if she backed the wrong horse with Stannis. We know that the priests of the Lord of Light seem to have the ability to raise the dead, or grant some form of immortality. I'd be willing to put money on Jon Snow being saved by Melisandre's magic, allowing further Azhor Azhai shenanigans to ensue.
The problem here is that in the books, when Jon is betrayed, Melisandre is still at Castle Black. In the series, she's with Stannis on the march to Winterfell.

In the season 5 finale, you see Melisandre back in Castle Black talking to Davos.
