You might want to check out Tinkerphones.

There will always be proprietary firmware for the modem, but you can turn it off if you can live with a phone which can't do phone calls.

Why is that? Phone calls are the only things I need a phone for, otherwise I could just use a laptop. Maybe I should just stick with an ancient Nokia and hope that it doesn't have any malicious features?

There are only modems with closed source firmware to buy. Probably because of regulations so phone owners can't do things like imitating SIM cards, build their own cellphone towers, intercept calls, jam signals and so on.
