I am seeking ideas on rice dishes, with or without beans.
I just made a few batches of seasoned / flavored rice. https://files.catbox.moe/0vcqbw.jpg No real rhyme but with reason, I cooked rice with chicken broth, soy sauce, paprika, salt, diced peppers and tomatoes,
Tajin, parsley flakes, a tap of hot sauce, ...
To side track a hair, I made this rice with great white northern beans (next time I would use a more colorful beans for nice contrast..
I boiled cooked prep chopped deboned chicken dark meat https://files.catbox.moe/kvd3jh.mp4 with the bone https://files.catbox.moe/plyzko.jpg in water with lemon pepper, 5 Ground Hot Pepper (shaker I made, ask I'll tell), paprika, soy sauce, like garlic powder. Likely forgot about some thing I added but anyways you get the idea.
I had a bowl like a rice soup. No pic.
I had plate with far less water.
I made some like fried rice and pan seared the refrigerated cold chicken pieces shortly and hotly and pan seared the cold cooked rice on the chicken til hot for a dry version and drizzled some the spicy chicken pan oil for some nice zap and zip.
Looks better with brown sear for contrast and improves the taste.
Seems to me to be a cheep empty canvas ripe for 'brush strokes' of flavor.
Celery I bet would be a good addition to the rice for flavor and a toothsome crunch.
I am somewhat new to rice. Always had a hard time making rice. It would always turn out so gross and mushy. (Over cooked outside and raw rice centers). Talked to to this chink a few years back. I said, what's up with my rice.. it sucks. What am I doing wrong. She said rinse it, it prolly has a coating on it. Certainly true of 'Enriched' verities, rinse that shit off. Even better throw that shit out and neve buy it.
Basic cheap rice is what I use. Sure it takes 15 more minutes than minute rice but it turns out so much better, that is of course an opinion against white adaptations of ethnic foods made stupid. Tacos for example, white man's dinner table tacos (hamburger and dairy toppings with salad[lettuce] are far different than what a taco nigger buys at a truck (chopped whole muscle meat and onions N cilantro lime N salsa sauce).
