I'm just gonna tackle each issue a bit at a time:

Moving the Betta.

First of all you should find out whats killing your snails in the tank first. Then you should read this: http://www.reptileforums.co.uk/forums/fish-keeping/433891-keeping-siamese-fighter-fish-gourami.html to decide whether you think its worth it. The Neons will be okay with the fighter. I'm not sure abou the gourami. I don't know that much about gourami's but after doing a quick check up online, Gourami's seem to be territorial, and fighters are also territorial. Its probably worth mentioning that the species of tank mates depends soley on the temperment of the fish. Also, I personally wouldn't suggest putting a Betta in with anything larger than itself as it could stress the fighter out. Also, keep him in a clear container at first so they can see each other. A breeding box that floats will do. Watch their behaviour towards each other. Any agression and they won't be good tank mates, if there's no agression then try putting them together but watch them closely.

Also, make sure your filter isn't too powerful for the Betta as this could stress him out and yep more plants would be Ideal! Be prepared to lose some neons if you do decide to move him over.

Plants:

Reduce the fertiliser intake, especially if it is a liquid one. Its okay to add some when starting your tank, but during the running of it, it can mess up the bacteria and algae within the tank leading to blooms of either which can deoxygenate the tank. Snails are actually pretty picky when it comes to the environment they live in. They require a lot of oxygen (surprisingly!) and are usually the first to go if theres a problem.

What species of plants have you got? How much do you know about them? If you don't know much you should definitely research them. If you need help IDing th eplants you should head over to /v/plantedtank there maybe some help there. How much light do you use? Most plants thrive of red/blue lights rather than green/yellow. Find out as much as you can about the plants. I unfortunately don't know much about plants myself and am still learning. My tank has some amazon sword inside it and it grows like crazy.

http://tropica.com/en/plants/ This should help you if you don't know what plants you have in your tank! Pruning also helps. You also need to check the water temp for your plants too. As some thrive at different temps.

Snails:

Check up on the species if they are a specific species, if not then try moving some new ones over and see if they die? Is it possible the gourami is eating the snails in the bigger tank? Maybe try some oxygen tablets if you can, and check the PH of the water. It could be that the plants are snail resistant too and give of a chemical that kills them when the snails eat the plant.

Thank you! I have the same plants in the betta tank as the big tank and the same species of snail ramshorn. Ive had nerite snails in to that died. I don't think the gourami is eating them, every time Ive put one in it moves around a little for a day then just lies in the same spot, can still see the snail inside the shell, until it dies.

Yeah, use less fertiliser if its liquid. It SOO easy to over use, I found out the hard way and my tank got covered in algae. The PH is slightly acidic but shouldn't cause a problem but if it changes suddenly or fluctuates that could cause a problem for them and shock the system.
