Old testament = Torah/Tanakh

An additional question is why does the New Testament make such extensive references to the OT/Tanakh/Hebrew Bible? It's almost as if they were all Jewish.....

why does the New Testament make such extensive references to the OT/Tanakh/Hebrew Bible

I can answer that by explaining why the Old Testament remains in the Christian Bible at all: It’s a historical testament to the behavior of jews. The OT is the best indicator that the jews are completely full of shit. God did not choose the Israelites because they were the best. He chose them because they were the worst. God created the world to create mankind–a being like Him in its ability to name and create, but lacking ultimate knowledge and power; a being that could learn, unlike Himself–a being that can know. Mankind was without sin, a being in tune with the natural world. Then came Adam, the man of red clay. Adam and his wife disobeyed the word of God and brought sin into the world. Man, who had needed food to survive, would now feel gluttony. Man, who needed sleep to rest, would now feel sloth. Man, who understood his nature, would now feel undeserved pride. Before the fall, it was God who had understood good and evil–who knew right from wrong. Man, who had known only good, could not bear this burden.

The jews are the “Sons of Adam,” the first of their race. They were the most despicable of the races–the enemy to the rest of mankind. God chose them for a purpose: redemption. To prove that even the worst of mankind could be brought back to God, from the line of Adam he gave the world His Son–the perfect man who would choose to save all of mankind–Jesus Christ. The Israelite priests feared this, and they feared the implications of salvation for all mankind. They could not bear the idea of no longer being chosen. In their jealousy, they put the Messiah to death while proclaiming his blood be on their hands for all time. Thereafter, God no longer protected the Israeli people. They had fulfilled their sole purpose–to bring Christ into the world. They had rejected redemption, and now would be damned until the end of time. Their homeland, given only by the protection of God, was lost. The lessons he had impressed upon him, they ignored. So the word of God–the word of Christ–spread to the “Sons of the West.” They established great towers, great civilizations, and become the inheritors of the world.

The jews of today are the inbred sons of the ancient Israelites, and are just as despicable. God is loving, and he offers salvation. In his eyes, even jews can come to salvation. But whereas other groups of people simply reject from ignorance, the jews are of the foulest sort. They reject from knowledge. More than that, they spit upon Christ, and oppose his teachings. They deceive people of weak faith and lead them to false ideologies. They speak of spiritualism and of the blending of the faiths. They are the false prophets, the antichrists, and the most despicable of beings. The spiritual war between the Sons of Adam and the Sons of the West will continue until one has utterly destroyed the other.

Man, who had known only good

Man knew of neither good nor evil prior to eating from the Tree of Knowledge of Good and Evil.

The jews are the “Sons of Adam,” the first of their race

According to the OT, all humans beings are technically the "sons of Adam", as all humans are descended from him kek.

To prove that even the worst of mankind could be brought back to God

God literally sent down a flood to destroy most of humanity kek

Dude, I don't think you have even read the Old Testament kek. The Christian god literally calls Israel his firstborn son, not Jesus kek (Exodus 4:22).
