I'm no biochemist, but as far as I know it's in the digestive system. Some protein in aspargus gets broken down into something that smells. People without the mutation can smell it as well, so it's not the nose.

Mutations are random, they don't serve a purpose. This one changes digestion a bit.

So is the mutation in the way the body digests or the way the nose works? Or both?
