If I was running Voat I'd just put text only Google ads on the site and offer a subscription of say a few dollars a month to support Voat and not have ads.

I think that's a good idea. I don't think a mandatory subscription would be a good idea because it would be a paywall to potential users, but a subscription for an ad-free experience might be a good way for users to pay for Voat directly.

I'm probably just uninformed but what does Google do that would be against Voat's ideas?

If Voat doesn't like google then they could pick a different ad supplier. I don't know if there's another good text only ad supplier though, and I don't think Voat has the employees to do ad sales itself.

This is actually a surprisingly good idea. It would be even better if we could pair it with a payment system that doesn't require crypto-currency.

Crypto-currency such as BitCoin can be hard to come by for a lot of users, especially those who haven't a clue as how to get any. For one, like what I've seen a few users over at /v/voatdev have been saying, crypto-currency wallets and accounts are kind of a pain of the butt to get started whereas straightforward debit/credit card payments are more easier and favorable by most online users.
