I always make on the stove-top as well. The way my parents taught me is

  • Put enough kernels in a pot that they cover the bottom with one layer.
  • Put them aside in a bowl for now.
  • Pour enough oil in a pot to cover the bottom.
  • Put 3 kernels in and put the lid on.
  • Turn on the heat on high.
  • Wait until you hear all 3 kernels pop.
  • Pour in the rest of the kernels.
  • Wait until popping has almost died down (1-2 seconds between pops).

How I do it too but with one small addition. When you add the bulk of the kernels after your test ones have popped take the pan off the heat and wait 30 seconds. This lets all the new kernels heat up to just under popping temperature so when you put it back on the heat they all go pretty close to each other.
