It depends on the level of communication you're hoping to achieve.

For basic things, grammar isn't important. "I hunger apple want" successfully conveys the message accurately.

When establishing a metanarrative, using ennuendo, or nuanced concepts, grammar becomes key. "I agree; the slavery of American blacks was a tragedy, and caused irreparable damage to those nations." This would not correctly convey the secondary meaning without excellent grammar.

Also, spelling, punctuation, and syntax are reliable heuristics for gauging the intellect of your partner, as well as providing a useful shiboleth for yourself to show that you aren't an idiot.
