That said, I believe cooking potatoes creates that carcinogen called Acrylamide. Brief look says high heat creates more, and the longer cooked the more it creates. Boiling is recommended as the least damaging. Or raw, if that's your thing.
Pretty much. Browning them by frying or roasting seems to be the worst, although I'm counting on old age getting me before the cancer does. If you read up on that stuff, it makes it hard to eat.
