Cooking the potatoes destroys the bacteria. Eating the potato raw may cause abdominal cramps, diarrhea, fever and an upset stomach. Two toxic chemicals (steroidal glycoalkaloids) solanine and chaconine are naturally present in potatoes and are important components of their resistance against pests and pathogens.

Green potatoes and especially potato sprouts, should never be eaten. Cooking does not deactivate these toxins. The raw potato also contains antinutrients that act as enzyme (protease) inhibitors. This might be a consideration if you don't eat well and crunching on raw spuds is a regular part of your diet.

I have never had any issues like bloating or whatever. I definitely wouldn’t eat a green potato; they are always clearly not ‘sprouts’ or similar. Maybe it’s just my body’s desire to remedy my familial risk of colon cancer?

Some research has suggested that digesting these resistant starches in small doses could have positive effects for colon cancer patients. Raw potatoes also contain more riboflavin, thiamine, and vitamin C than cooked potatoes and raw potatoes don’t increase blood sugar.

If I get the shits or bloating from raw potatoes, I’ll give you a ping!

That said, I believe cooking potatoes creates that carcinogen called Acrylamide. Brief look says high heat creates more, and the longer cooked the more it creates. Boiling is recommended as the least damaging. Or raw, if that's your thing.
