I like the crunch and the earthy flavour of the skin. Particularly when diced into large chunks, I don’t find it tough at all. The texture of a baked potato, on the other hand, I believe is unappealing.

I was just picturing you chowing down on whole raw potatoes, I hadn't thought of dicing it.

I'm the opposite, texture-wise. I like baked and mashed potatoes best. I like 'em fluffy with lots of dairy.

Just quartering them is enough. Sometimes I’m lazy and will just bite on the full potato. But generally I have a knife out to get rid of bitter eyes, so at that point some dicing is in order. Salt to taste and enjoy! I’m surprised that it’s so uncommon. I get strange looks at times.

Of course: Mashed are delicious, too! Also of course: Sliced, lightly boiled, then griddle-fried.
