Depends on the amount and the precedent of each case. If there's no owner it's usually tested then destroyed. In other circumstances cash and substances can sit in evidence for decades. Some of it can also be used as reference for testing to see how things are being processed or cut by dealers. Genealogy of plants are also studied. Cocoa for example now has super strains that are hydroponically grown in north America now. Something that the feds are trying to deny.
