Bring your PC tower and an HDMI cable to connect to their TV in the room. Don't forget the keyboard and mouse.

Had been thinking about building a computer, but stopped when I realized I was going to be traveling all the time. Maybe now I'll look back into it!

Just get a Mini-ITX case/motherboard or even a small Micro-ATX setup, and you'll be good to go. You should be able to make it small enough to fit in a backpack or briefcase.

Next charging cables for devices, plus pick up the coffee maker cook book. Tons of foods that youcan make in the little coffee maker they have in suite.

Is this relatively reliable/ fast wifi? Slow wifi is probably my main issue with most hotels.

I always take a hdmi cable for my laptop + If you forgot your wall wart but remembered your charging cable most lcd tv's have a usb on the back for servicing, so you can charge your phone.

Lightweight everything possible without quality compromise within reasonable prices.
A couple of quick ideas, see if they might apply to your particular needs.
Laundry bags to organize clothing, to speed up packing and unpacking.
Lightweight hooks, that can go on doors, or clothes rack, can buy at dollar store.
Small bluetooth speaker. Small earphones maybe with integrated microphone.
