Second, this trend in the west seems to be increasing with each passing year. I love food and I enjoy cooking and I've worked in some very high end places but the endless barrage of menu modifications and stupid requests has me ready to say 'enough' but I don't want to walk away because I have so much experience and have sunk so much time and energy into learning and getting good at this.
Of course ownership/management is completely guided by mercantile bourgeois values, as Danny Meyer (NYC restaurateur) sad, "Yes is the answer, what is the question?"
It really seems like about half the population in the USA (as an aside, this seems to be almost exclusively a USA thing) has to have their favorite food fix 'just so,' from the cunt with her half caf/light ice/extra caramel frappacino to "I CAN'T ONIONS" (Fuck these fuckers especially, onions are the basis of all savory cooking).
It's one thing when it's a three year old but getting this shit from adults makes me want to hurt people. Chefs obsess about making dishes perfect and a good chef won't put anything on the plate that's not necessary and a good potion of diners just want to shit all over it like it's their job. Also these are people who probably can't boil an egg (alternately 'I CAN'T EAT EGGS HURRR').
In the bigger picture it's this cult of hyper-individualism that is IMO leading us right up to the precipice of the end of Western Civilization.
Also kikes are the worst.
