See the thing is, the Big Bang doesn't even account for my question. The big bang says "the whole universe was in a hot dense state", that's already after matter exists

Nope! Despite what you may have learned from unfunny sitcom jingles, there was no matter before the big bang, nor for several hours after it. The big bang was an enormous release of energy, basically the biggest explosion our universe has ever seen. Only when all that energy cooled off a bit did it start to form quarks, which came together to form atoms. If you're wondering how pure energy can become matter, a Jewish refugee during World War II wrote a lot on the subject.
