I'm a bit of a snob, so it's my home made dough (takes ~4 days to cold rise, best flavor and texture), my home made marinara, and the toppings just depends on my mood. I tend to splurge for Really high quality cured meats (pepperoni and salami), fresh or smoked mozerella (something I don't hand make... yet), high quality Parmesan that's freshly grated for each use, sausage and center-cut bacon from a local butcher, fresh veggies (onions, peppers, etc...)

I really go all-in for pizza. It's probably the food I love the most, though I only eat it about twice a month so I can maintain my amazing physique without going all pudgy in the middle. Actually having some tonight as my wife just came off a long weekend of on-call work and can finally have some of my homebrew beer (3 taps in the kitchen).

The BEST pizza I ever had was in Civitavecchia (Portal city to the north of Rome). It consisted of nothing more than some fresh basil, the best tomato sauce you have ever tasted and Bufallo Mozzarella. The bread itself was thin and somewhat crispy. One thing I remember is that you bought the pizza by weight over there. They also had a kick ass pizza known as the 'Coperta' which consists of two pizza bases joined together like a thin sandwich with tomato sauce, chilli, a tiny amount of mozzarella and anchovies in between, fucking tasty believe me!

For me when it comes to pizza the dough is more important than the toppings. I need to get my ass back to Italy some time soon...
