I'm not a medical doctor, so my knowledge of this is rather limited. Wiki suggests that the gastroenteritis is caused by intestinal (stomach/bowel) contents leaking into the groundwater. They do mention that cadaverine and putrescine (two toxins produced in decomposing bodies) can be harmful in large doses, but it sounds like that's only a problem if you eat the decomposing flesh.

Cholera if the dead bodies are buried near the main water supply. I could be wrong though I'm no expert.

I assume it's something simple like, bacteria that likes to eat dead people also likes to eat alive people. Dead people are easier to eat with less defenses so there is more of it which increases the chances of it spreading to the alive people.

It's not just contact with them. It's the swarms of insects carrion, and pests along with contamination of food and water from decaying bodies as well. I don't know if that was included in your question or not but that's something else to keep in mind.
