First, evolution does exactly have a point.

Coconuts appear to have optimized to travel over seas and carry enough fresh water to germinate themselves.

Nutritional value to other species may not have had a strong force in their development. In fact, consider that it may be more likely that coconut consumers optimized to consume plant seeds rather than the coconut optimizing to be consumed.
