I'm not too sure how that would end up.

I followed this pretty closely for dinner tonight, had it in brine for about 2 hours with rosemary, black pepper, and garlic salt. Then seared a side in a pan with olive oil for 3 minutes. I didn't have a cast iron skillet on hand so I had a baking sheet and foil ready at 400 F. I transferred the oil and chops to the baking sheet and left them in for 10 minutes. I pulled them out and covered with foil for 5 minutes, meanwhile letting the plates warm up in the toasty oven.

They managed to be the juiciest chops I've had, would definitely recommend these directions!
