Well, I might be biased, but the Fallout series is absolutely one of the most immersive experience you'll ever find. I remember hearing about Fallout 3 from a friend, and he told me how amazing it was. It totally lived up to said expectations, and I fell in love, even more so with New Vegas after...

Funnily enough, a major game that seems to get overlooked is Payday 2. Seriously, the game is awesome right now. Some can call it repetitive, but there are always new content updates brought out, and the devs are very vocal with the community. Solid game.

Hardcore, if we go by the time I spend gaming. Mostly Bethesda and FPS titles, though RPGs are my favorite. Something about saving the world and becoming a badass, as well as a struggle for survival, is fun.
