I have this ungodly expensive immersion heater, and I'm sure it works fine, but I was very disappointed in the results - tried it several times, but had not pre-salted the meat. http://www.williams-sonoma.com/products/polyscience-professional-sous-vide-thermal-circulator/
Supposedly keeping the temperature exact is very critical, though some people have made crude ones out of crock pots and a pid controller.

Sous Vide is Hipster wankings. If you cook your steak in cast iron properly, it will be perfectly done, without the need for an expensive immersion heater or a multi hour wait.
