Shark kabobs. Unlike fish, shark meat doesn't go all flaky and fall apart, so you can shove that shit on a skewer and grill away. Tastes pretty good too.

Thighs aren't too bad, as long as the buttocks are supple to start with they tend to have good marbling and will take well to just airing at room temperature with salt and pepper. As for any abdominals, neck, arms or calves, if over worked than it will be tough. If Mom-Arms are prevalent then there will be a lot of trimming to do but, that is usually an indicator of not being overworked. Remember to remove the silver skin and cook thoroughly to avoid illness. Your finger-palm toughness guide still works well for this too for medium, well, medium-rare, etc.

Snails -- the large sea types, crab, scallops and oysters .... Ummm yummy!

Salmon was wrapped in tin foil with various veggies and apples -- lots of butter and olive oil.

Not really BBQ but thin slices of marbled beef fried on a slab of salt was probably one of the best things I've done over an open flame without a pan.
