Thanks, man. Cooking is a skill, if you want to be good you just have to work at it. Creativity comes later, I firmly believe everyone can cook if they apply themselves.

The office gig can be nice, but it's not for me. I have to break my back and work with my hands.

Thanks! It turned out to be a quick HR prescreen so it wasn't too painful. Just hoping I didn't low ball myself when we discussed compensation. Always such a gamble!

Good luck! I've done that farm to table stuff, and it's... Well, to me, annoying is the least I can say. Worked in and managed a kitchen that did that, It's just a bunch of extra work and overhead IMO. I understand why people do it, and like it, but I personally never will again. Props for doing something you like, at least for a little bit. Have fun while you can, before it becomes work again.

Thanks, man. The chef seems to have this thing figured out. Also growing a lot of his own stuff helps with overhead. Although I soon will learn. I know he said the restaurant is not a great business plan and is likely expanding into catering this year.

Well, that's the thing. A lot of people thinkit helps with overhead, but they don't figure in the extra labour, the licenses to actually sell that stuff, the even more labour of having people do 2-3x the work cleaning and preparing the product, the costs associated with being organic (which are NOT insubstantial), and such. He might be getting away with it easier, being just a garden and a small town, but it gets exponentially worse the bigger you get. The catering will help offset it a bit, though, that's good money if you get enough business.
