Well put - you're right that the average person is appalling ignorant of how self employment works. I wonder if Uber provides some type of webpage with a high level overview of this for drivers. It would help, though drivers still need to take responsibility for understanding the tax implications of self employment.

Sounds like people need better education on taxes, income and personal finance. That's not Uber's job, it's the failure of the education system and government. You mentioned the part about tax refunds; ideally you should aim for $0 tax refund. Any amount you get back as a refund is just a free loan to the government that you have earned $0 of interest on. That money could've gone to credit cards and other debts and reduced your own interest charges for several months. I know it sucks but people should be saving a portion of their income in a high interest account to pay as taxes.

If people quit their jobs to join Uber well that's their own fault. They should stop giving into peer pressure and understand the job market and the nature of the job before switching careers like that.

I'm not saying Uber is perfect, I just don't agree with your points.
